Drunken Noodles

Drunken Noodles is the literal translation of “Pad Kee Mao”. The most common theory about the origin of the name is a simple one … These noodles are perfect after a night of drinking with friends !!!

INGREDIENTS

Drunken Noodles
Oyster sauce 2 Tbsp
 Light soy sauce 2 Tbsp
Fish sauce 2 tsp
Wok oil with chilies 1 Tbsp
Coconut Sugar 2 tsp
Rice noodles 200g
Chicken breast 200g
Garlic clove 4 pieces
Dried chilies 3 pieces
Baby corns 6 pieces
Broccoli 2 florets
Fresh basil 1 bunch

INSTRUCTIONS

Drunken Noodles

Cook the rice noodles

Boil the rice noodles for about 5 minutes until they’re soft. Drain the noodles and then rinse them thoroughly with cold water, this will prevent them from cooking further and becoming too soft to use.

Prepare the sauce

In a bowl combine together oyster sauce, light soy sauce and fish sauce.

Prepare the chili paste

Crush together garlic with dried chilies.

Stir fry the meat

Heat 1 Tbsp wok oil with chili in a pan. Stir fry the chili paste until the garlic turns brown. Add minced chicken and minced veggies.

Add noodles and seasoning

Add cooked noodles. Stir the sauce and 2 tsp of coconut sugar. Simmer until cooked through.

Plate your dish

Garnish basil, mix well and serve hot.
