With its silky coconut base and aromatic spices, this comforting curry pairs beautifully with steamed jasmine rice, soaking up every drop of its golden, flavorful sauce!
| Prawns, peeled and deveined | 12 pieces |
| Yellow curry paste | 70 g |
| Coconut milk | 400 ml |
| Fish sauce | 1 tsp |
| Bell pepper, sliced | 1 piece |
| Onion, chopped | ½ piece |
| Cherry tomatoes, quartered | 6 pieces |
| Coconut sugar | 1 tbsp |
| Coriander | 1 bunch |
Sizzle the Curry Paste
Heat a tablespoon of oil in a saucepan over high heat. Add yellow curry paste and stir-fry for 2 minutes until fragrant.
Add Coconut Milk & Veggies
Lower the heat and pour in coconut milk. Add chopped onion, bell pepper, and cherry tomatoes. Stir well and bring to a boil.
Add the Prawns
Add prawns and cook for 5 minutes until pink. Season with fish sauce and coconut sugar. Simmer briefly until the sauce thickens.
Serve
Spoon the prawn curry over steamed white rice and sprinkle with fresh coriander leaves.
