| Lemongrass wok oil | 1 tbsp |
| Coconut sugar | ½ tbsp |
| Fish sauce | 2 tbsp |
| Tom Yam seasoning | 1 tbsp |
| Dried chillies | 3 pieces |
| Lime | 3 pieces |
| Coriander leaves | 1 bunch |
| Mint | 1 bunch |
| Spring onion | 3 stems |
| Shallots | 2 pieces |
Cook the Chicken
Heat 1 tbsp lemongrass wok oil in a pan. Stir-fry the minced chicken until cooked through.
Add Veggies
Add sliced spring onions, minced coriander leaves, and minced shallots. Cook until softened.
Add Seasonings
Add coconut sugar, fish sauce, Thai mix spices, and dried chillies. Mix well and simmer for a few minutes.
Plate Your Dish
Garnish with fresh mint and lime wedges. Serve with rice.
