| Tom Yam paste | 70 g (1 sachet) |
| Prawns (peeled, deveined) | 8–10 pieces |
| Shallots, minced | 2 pieces |
| Lemongrass, sliced | 1 stem |
| Mushrooms, quartered | 100 g |
| Lime juice | 1 tbsp |
Prepare the Stock
Boil 500 ml of water in a large saucepan. Add 1 chicken stock cube and stir until dissolved. Add the lemongrass and shallots.
Add Tom Yam Paste
Stir in the Tom Yam paste into the boiling water until completely dissolved.
Add Prawns & Seasoning
Add the prawns and mushrooms, then add the lime juice. Simmer until all ingredients are cooked through.
Garnish & Serve
Serve in soup bowls and garnish with a handful of fresh coriander.

Very spicy and delicious quick soup to make! It is also gluten free 😍
