Tom Kha Kai Soup

Tom Kha Kai is one of the easiest, quickest, yet most flavourful soups you will ever taste! It is light yet creamy, sweet yet citrusy and bursting with layer upon layer of fantastic flavour. It can be served as a main course or appetizer, with or without rice, reheats beautifully.

Ingredients

Tom Kha Kai Soup ingredients
Coconut milk 180 ml
Tom Kha paste 70 g
Fish sauce 1 tbsp
Chicken breast 250 g
Stock cube 1 piece
Shallots 2 pieces
Button mushrooms 120 g
Cherry tomatoes 6 pieces
Lime juice 1 tbsp
Fresh coriander 1 bunch

Method

Prepare the Stock

Boil 500 ml of water in a large saucepan. Add 1 chicken stock cube and stir until dissolved. Add shallots.

Add Chicken

Add 250 g sliced chicken breast. Bring to the boil.

Add Veggies & Tom Kha Paste

Add quartered mushrooms and cherry tomatoes. Stir in the Tom Kha paste.

Add Coconut Milk & Seasoning

Add 180 ml coconut milk and 1 tbsp fish sauce. Simmer until cooked through. Finish with 1 tbsp lime juice and garnish with fresh coriander.

    You used to sell a Tom Kha instant soup package. It was very popular in my home. I cannot find it any more. Do you still this spice mix and if so, how can I get it. I did not see it offered on your web page. thanks, Heidi
