Prawn Yellow Curry

Ingredients

Prawn Yellow Curry ingredients
Prawns, peeled and deveined 12 pieces
Yellow curry paste 70 g
Coconut milk 400 ml
Fish sauce 1 tsp
Bell pepper, sliced 1 piece
Onion, chopped ½ piece
Cherry tomatoes, quartered 6 pieces
Coconut sugar 1 tbsp
Coriander 1 bunch

Sizzle the Curry Paste

Heat a tablespoon of oil in a saucepan over high heat. Add yellow curry paste and stir-fry for 2 minutes until fragrant.

Add Coconut Milk & Veggies

Lower the heat and pour in coconut milk. Add chopped onion, bell pepper, and cherry tomatoes. Stir well and bring to a boil.

Add the Prawns

Add prawns and cook for 5 minutes until pink. Season with fish sauce and coconut sugar. Simmer briefly until the sauce thickens.

Spoon the prawn curry over steamed white rice and sprinkle with fresh coriander leaves.
